In its olive groves, which cover about 300 hectares in Vernole, Castrì and Carpignano Salentino, you can find different variety: “Ogliarola leccese”, “Cellina di Nardò” and “Leccino”. The olive groves are almost entirely irrigated, they are pruned every two years, olives are handpicked and then using mechanical tools which prevent olives from falling as to guarantee a quality product without any defect due to the old methods. The olives are brought to the modern oil mill, where they are processed the same day they are picked up. This prevents from the degradation of the product and guarantees a low acidity, the absence of defects of flavor and smell, the conservation of the intrinsic qualities of the olive oil famous for its richness in vitamins and antioxidant action. |
